Hamo (Japanese Hamo) is a type of eel that gains fat and flavor from the onset of the rainy season. The owner is well-versed in both Japanese and Western cooking, skillfully maximizing the flavor of fresh fish with expert knife techniques. Our signature pufferfish dishes are among them. We will prepare the fatty mackerel that was caught that morning in a magnificent sashimi presentation. The large mackerel weighs about 600g, making it suitable for 4 to 6 people. Its thick, sweet, and crunchy flesh is satisfying to eat, and it is greatly appreciated at celebratory occasions and by guests from outside the prefecture.

This is Sankou's proud ponzu made from carefully hand-squeezed daidai. By squeezing it in a way that avoids bitterness, it offers a refreshing taste that enhances the natural aroma and flavor of the daidai, bringing out the taste of the ingredients.
