A refined Edomae sushi experience in Fukuoka

Sushi Seimatsu is a restaurant where you can enjoy authentic Edomae sushi crafted by a young chef who trained at a famous establishment in Tokyo. The calm, modern Japanese interior attracts visitors with meticulously prepared nigiri sushi and appetizers. In particular, the medium fatty tuna and grouper sashimi are exquisite, showcasing the appeal of fresh seafood sourced that day. Beautifully presented dishes allow guests to enjoy Edomae sushi with all five senses.

Chef was professional and friendly shared his knowledge of different kinds of fish. We had a lovely night to celebrate our wedding anniversary. Definitely would recommend to our friends and love to visit again when we go back Fukuoka next time!

We reserved the omakase course in advance and visited for lunch. Upon arrival, we were initially guided to a private room and asked to be moved to counter seating, but the request was declined. The counter remained mostly empty throughout lunch, with only two guests seated there, so I’m not sure if there were internal reasons, but it was still disappointing to have to dine in a private room. The appetizers and pre-sushi dishes were good, but the sushi itself was fairly average. Both the neta and the shari lacked distinct character, and the overall seasoning leaned toward the mild side. If you prefer clean, inoffensive sushi without strong flavors, this place may still appeal to you.

Excellent experience. We tried the Omakase Nigiri Mogami course and requested for the counter. The courses were well thought up and a good flow. Delicious. The Chef was friendly and able to explain the courses in English. He also gave good sake recommentation. Overall excellent experience.
