We use buckwheat flour from Oiwake, Hokkaido.
It contains 100 times more 'rutin' than ordinary buckwheat, and old herbal medicine books state that 'Dattan Soba strengthens the stomach and increases vitality.' The strong and vividly yellow Dattan Soba is available in limited quantities. (Additional 100 yen)
You can enjoy soba noodles with 'water salt' even when served in a colander. Please savor the flavor of soba with our original salt.
The 'kaeshi' prepared at our shop is aged for at least one month. The soba dipping sauce made with this kaeshi enhances the soba with a carefully crafted bonito base and kombu dashi.
