We purchase Akamoku (a slimy seaweed similar to mekabu) in large quantities every year, fresh from the local Nokita Fishing Port on the Itoshima Peninsula. The small port of Nokita handles everything from harvesting to shipping completely by hand, and due to the very low production volume, it is a precious seaweed.

This is a kakuni made from the soft bones of Italian whey pork, cooked until tender. It is topped with fluffy yamato tororo boushi, creating a smooth finish. Made slightly sweet with brown sugar and Kyushu soy sauce, it pairs perfectly with the yamato boushi.
This is a thick cut of tender braised pork, inspired by the local dish Rafute, which is cooked with Okinawan shochu and awamori. It is simmered with Kyushu shochu and brown sugar. In Okinawa style, it is served with a generous amount of Kooreegusu (island chili pepper) that makes you cough when you eat it.
