We prepare fresh and high-quality whole chickens delivered daily by our Hinai Chicken procurement manager, Kazushige Abe. Although it is a labor-intensive method that is often avoided, we are committed to in-house preparation to provide fresh chicken at its peak aging. We grill the skewers made on the same day. While the whole chicken preparation limits the available cuts, it allows us to offer rare parts, so you can try unique yakitori.
The chicken has subtle differences in texture depending on the part and the season, affecting the amount of fat. At Honke Abeya, we take great care to enhance the flavor of Hinai chicken by applying different cooking levels and seasonings to each skewer. Please enjoy our uniquely grilled chicken skewers, which are prepared using a variety of seasonings such as salt, sesame, pepper, balsamic vinegar, white sesame oil, and sake, combined according to the ingredients.
