The chef has used ingredients from Akita, the chef's hometown, and arranged them in Italian cuisine. This course includes 13 dishes that are very popular at Agatte Tanche. Please enjoy the collaboration of Akita and Italian cuisine. For the main course, we offer grilled Akita Shorthorn Beef, which is said to be a rare rare breed of Akibeast. The polishing ratio is 40%, which brings out the full potential of Misato Nishiki. Tenshuka is crafted to be the most robust among the colors, offering a rich body and lingering finish.
Kaizen Shinkou is a sake-brewing rice that was first produced in Akita in 1959. With its smooth and expansive flavor, Kaizen Shinkou is currently used only by Aramasa in Akita, making it a symbol of Aramasa. Cosmos is a precious sake brewed using wooden barrels.
A line that best conveys the fundamental spirit of the new 'Shinsei' from 'PRIVATE LAB', brewed using innovative methods rather than traditional Japanese sake production. The elegant expression of applying designs that align with the quality of the sake on the label is truly remarkable.
Among the lineup of Shinsei, 'Flax Cat' can be said to be the most unique work. It is brewed using sake koji along with shochu koji (white koji) that has a strong acidity, allowing you to enjoy a flavor profile that is quite different from traditional sake. It can be described as a hybrid of sake and Ryukyu culture, and even in its current established form, it stands out with its distinct character.
