During the Edo period, it seems that the common belief was that the sake served in soba restaurants was of high quality, leading to the notion that soba restaurant sake is delicious. According to one theory, while izakayas in the Edo period diluted the sake they purchased from wholesalers with water to increase the quantity, soba restaurants, being primarily focused on soba, did not dilute the sake they bought from wholesalers.
In Muroran, when you say 'yakitori', it refers to 'pork' and 'onion'. In the early Showa period, pork offal and wild birds were commonly grilled on skewers at stalls, and gradually, pork, which was cheaper and more accessible than chicken, came to be known as 'yakitori'. Onions, being produced in Hokkaido, are also cheaper and more readily available than long green onions, and they pair well with pork, which is why they became established in this dish. The Muroran style is to eat it with a secret sauce unique to each shop. The secret sauce of Saizō adds umami and richness with kombu, brown sugar, and honey.

A specialty of Saikura Omiya, this dish allows you to enjoy both charcoal-grilled cuisine and handmade soba noodles made fresh daily in the restaurant! Charcoal-grilled meat and vegetables are placed on boiled soba, and by steaming them all together with soba broth, the aroma of charcoal is infused into the soba, enhancing its flavor. By adding a raw egg, which pairs perfectly with the charcoal, to the warm soba broth, you can further experience the scent of charcoal! To allow you to choose it as a finishing dish, the amount of soba is set at a modest 100g.

A masterpiece of sweet potato shochu that leads the popularity of black koji. It brings out its umami in any way you drink it, and the sweet aroma and impact of the golden senkan entice the palate. Made from carefully selected sweet potatoes and water, with a white koji fermentation that gives it a delicate flavor and smoothness. It has the natural sweetness of the sweet potato and a straightforward aroma, resulting in a soft taste. While 'Sato Kuro' is considered masculine, 'Sato Shiro' has a feminine taste, with the sweetness and warmth of the sweet potato flowing smoothly through the body. Enjoy it with hot water or on the rocks!
