A selection of the highest quality marbled meat from Kumamoto Prefecture, including the premium cut 【Sankakubara】, a part of the belly meat 【Joubasashi】, the naturally red meat of horse 【Momo】, the exquisite balance of fat and red meat 【Futaego】, and the local Kumamoto favorite with a crunchy texture full of collagen 【Kone】, served as a five-item assortment.
The fresh liver sourced from high-quality horses is a rare cut even within the country. It has no unpleasant odor, and you can enjoy the unique flavor of the liver that has a firm texture when bitten into and becomes creamy when chewed.
This stew is made from premium quality horse tendon sourced from our sister store, a horse meat specialty shop called Umazakura. The tendon is aged for an additional 24 hours after completion, resulting in a rich and exquisite flavor. Takeout is also available!
