Dagojiru with Kijiji made with Kijiji Sashimi + Kijiji Soup
Made by cooking 50 chicken bones of kijiji over low heat in a large pot for a long time. The soy sauce flavored broth is served in an earthenware pot and eaten with shabu-shabu. Afterwards, it is served as zosui (rice porridge), which is exceptionally tasty and satisfying.
Kiji-sashi has a different flavor.

Once the pheasant soup is boiling, add vegetables such as Chinese cabbage, cover, and wait for it to cook. When it boils, please enjoy the pheasant meat by cooking it briefly in a 'shabu-shabu' style to avoid overcooking, as overcooking will make the meat tough and less delicious. (Pheasant meat is fresh, so it can also be enjoyed raw.)
