Every day, a variety of seafood is brought in from various places such as the fishing ports of Akashi, Amakusa, and Kochi, as well as the Osaka Central Wholesale Market, depending on the season. Our specialty aged fish is managed by skilled artisans using unique methods to ensure it can be enjoyed safely and securely, while concentrating the inosine acid found in horse meat to enhance its flavor. Fresh fish is also processed with techniques such as live killing and nerve removal tailored to each type of fish, ensuring an even more delicious experience. Our dedication is evident in everything from tempura and simmered dishes to grilled fish and meat dishes, as well as seasonings like soy sauce and salt.
Incredibly delicious fish becomes even tastier with aging. Our unique cold aging technique enhances the umami of the 'aged fish.' We utilize techniques that maximize the quality of the fish, including nerve stunning and blood removal. Of course, we also offer fresh fish directly sourced from regions such as Amakusa, Akashi, Sukumo, and Nemuro, as well as from the Osaka Central Wholesale Market. Please come and experience the difference.
Our recommended fresh fish × aged fish. To enjoy the delicious fish even more: 1) Eat it quickly! The freshness decreases over time, especially for aged fish, so enjoy it soon! 2) Use salt to enhance the fish's aroma and sweetness! Please savor the umami with soy sauce! 3) For the final touch, a sip of sake makes it even more delicious!
