When it comes to okonomiyaki, Osaka and Hiroshima are famous, but the representative okonomiyaki from Okayama Prefecture is 'Kakioko'. It is said to have originated in the fishing town of Hinase, where the fishermen's wives would use small oysters or damaged oysters in their okonomiyaki. We strive to provide the most delicious oysters possible, but please note that we may suspend service during times of poor catch or supply shortages. We hope you enjoy our signature dish. *Kakioko will only be available when oysters are in stock. If fresh oysters are unavailable, we will use frozen oysters, but please be aware that we may not be able to serve them depending on supply conditions. Thank you for your understanding.* Eating oysters may cause health issues. Those who are fatigued, have health concerns, elderly individuals, pregnant women, and children should refrain from consuming them. Our okonomiyaki batter contains nagaimo (yamaimo), but does not contain shrimp powder. *Please be advised in advance.* Regarding oysters: We use approximately 100g of oysters per serving, but the number may vary depending on the season and size. Additionally, we may not be able to serve them depending on supply conditions. Thank you for your understanding. *About the Kakioko trademark:* Our restaurant 'Okonomiyaki Mori' has entered into a trademark license agreement to properly use the 'Kakioko' trademark and pays a licensing fee.

This is an okonomiyaki made luxuriously with local specialties from Setouchi, including yellow garlic chives, cilantro, and oysters. The batter is mixed with yellow garlic chives and cilantro, and grilled oysters are sandwiched in. Additionally, pork is placed on top, and two eggs are used. One half is brushed with special sauce, while the other half is coated with yuzu ponzu, allowing for a variation in flavor. For the finishing touch, roasted yellow garlic chives and cilantro are used as toppings. The development of this menu was inspired by a customer's request last autumn during a visit from Tokyo, saying, 'I want to eat all the yellow garlic chives, cilantro, and oysters from Okayama!' The 'Setouchi Special' is packed with the flavors of Okayama, and we hope many people will enjoy it. *This dish is only available when oysters are in stock. If fresh oysters are not available, frozen oysters will be used, but please note that availability may vary depending on supply conditions.
