This is a junmai sake made from 60% polished original sake rice 'Yume Ikken' from Fukuoka Prefecture, carefully fermented at low temperatures. Essentially, it is brewed as junmai ginjo.
The nama sake brewed by a small brewery near the Kawachi Reservoir in Kitakyushu has a rich flavor that showcases the true taste of the sake.
Raw material rice: Yamada Nishiki 100%. Our store's number one popular choice.
A special junmai sake made by a brewery that originated the Association No. 9 yeast and has led the ginjo brewing. This sake is made using Yamada Nishiki for the koji rice and the revived rice Kyushu Shinriki for the main rice.
Rice used: Manamusume, Silver to Gold Award in the Junmai category at the National Sake Appraisal from 2012 to 2014
