This ramen shop, which evolved from a food stall to a brick-and-mortar establishment in Kani City, Gifu Prefecture, offers a wide variety of menus including milk ramen, Taiwanese-style ramen, miso ramen, and dragon mixed noodles. The carefully crafted broth, made with Gifu Prefecture's Bouno Pork, mineral-rich natural salt, and purified water, is rich in back fat yet refined and easy to drink. The melt-in-your-mouth soft cartilage chashu and chewy thick curly noodles enhance the flavors, and the hearty buta-meshi (pork rice) is also very popular.

The counter is the main feature of the shop, making it easy to enter even alone. You can place your order at the vending machine, and the process is very straightforward. The mixed noodles have a chewy thick texture that holds the sauce well, and the crunchiness of the bean sprouts lightens the aftertaste. The soft cartilage chashu and the aroma of green onions provide a nice accent, making it very satisfying. The soy sauce ramen, despite the visible back fat, is not heavy and has a gentle mouthfeel. The milk-based bowl has melted cheese, adding richness, and you can enjoy it like a risotto by adding rice to the soup at the end.
