This delightful course is packed with dishes we want you to enjoy when you visit Sano-ya, including our signature aged eel, seafood delivered fresh that day, and vegetables harvested that morning. We serve approximately 10 dishes featuring seasonal ingredients that change daily. We carefully select each eel and adjust the aging time to provide you with an unforgettable eel experience unlike anything you’ve ever tasted. You can also enjoy dishes such as shabu-shabu and sukiyaki made with beef sourced from Nagano, Yamagata, and Hokkaido, depending on the day’s menu. For your meal, you’ll enjoy Uonuma-grown Koshihikari rice—a favorite among our guests—served in three separate courses at different times. For a side dish, we serve braised pork from Hakuba, Nagano Prefecture. To finish, please pour the braising sauce over your rice and enjoy. For dessert, we prepare sorbet from seasonal fruits right before your eyes. *If you have any food allergies, please let us know at the time of reservation. We offer 7 to 8 varieties of premium sake to complement our monthly menu. Each serving is approximately 50 milliliters, and we adjust the amount of sake based on the portion size of the dishes. Sakes such as “Ishidai” are served using rice varieties that change monthly. We also offer hard-to-find sakes like “Ryū no Otoshiko” and “Shichidare Nijūkan” when they are available. For drinks, we recommend the Sake Pairing Set (4,950 yen), which focuses on sake. We’ll serve 7 to 8 varieties of sake to accompany each course. We also offer a Half Pairing Set (3,520 yen), featuring approximately 2 go of sake. If you find a sake you particularly enjoy, you can order a refill (for an additional charge).
