Known as one of Hong Kong's specialties, the long-established wonton noodle shop "Mak's Noodle". Inheriting the taste of the original founder, who was called the "King of Wonton Noodles" in Guangzhou during the 1920s, they still prepare each bowl using traditional methods today. In the past, it was selected as a Michelin Bib Gourmand, and it represents Hong Kong as the "pinnacle of the common people's cuisine." Currently, it has multiple branches throughout the city, including Central, Causeway Bay, Mong Kok, and Tsim Sha Tsui. The location I visited is the store along Lock Road in Tsim Sha Tsui. Despite being in a tourist-heavy area, the kitchen is manned by skilled artisans, and their commitment to carefully boiling each bowl of noodles remains unchanged. The menu is traditionally centered around shrimp wonton noodles, with options like beef brisket noodles and lo mein. I ordered the signature shrimp wonton noodles. The clear broth, thin noodles, and chewy shrimp wontons are all present. The small bowl contains a well-balanced layer of flavors typical of Hong Kong. The size is just right for eating on the go, and with each bite, you can feel the harmony of the broth, noodles, and wontons. Even in the heart of a tourist area, the essence of flavor creation remains unchanged, making it a place that embodies the "origin of Hong Kong".
