In a course style, small dishes that complement sake are served one after another. The simmered shiitake mushrooms, salted turnip mixed with shrimp, and grilled eel with homemade condiments are irresistible when combined. The steamed conger eel and matsutake mushrooms, as well as the matsutake rice, are fragrant and allow you to fully appreciate the blessings of the season. There is a rich selection of house-aged sake, and its character changes significantly with temperature differences. Here, warm sake is the main focus, and cold sake is not available, which is commendable. Even the pure spring water is delicious, and the harmony between the food and sake brings a smile to your face.

The course is structured in a way that brings out various snacks that pair well with sake, making it enjoyable. The focus is on house-aged warm sake, where the differences in temperature enhance the aroma and flavor. Dishes like simmered shiitake mushrooms, a salad of turnips and shrimp, and grilled eel are prepared with care, and the homemade condiments complement them well. The steamed eel and matsutake mushrooms in a teapot and the matsutake rice are also rich in aroma, bringing a smile to your face. The water is clear like spring water, making both the food and sake taste even better. The mellow flavor of the aged sake combined with carefully cooked meat, along with a slightly sweet sauce and the tanginess of homemade mustard, creates a pleasant sensation.

This course uses an abundance of spring wild vegetables, autumn mushrooms, and other seasonal vegetables. We also include ingredients such as Yokoyama-san's eel, Matsusaka beef, and hairy crabs, and serve the best of what is available only on that day and in that season as accompaniments. All the water used for cooking is spring water, and the flavor is based on brown rice malt, a menu that goes hand in hand with junmai sake and wine. Because we only have a counter, our food is cooked right in front of our customers and served freshly grilled or deep-fried.
