This course uses an abundance of spring wild vegetables, autumn mushrooms, and other seasonal vegetables. We also include ingredients such as Yokoyama-san's eel, Matsusaka beef, and hairy crabs, and serve the best of what is available only on that day and in that season as accompaniments. All the water used for cooking is spring water, and the flavor is based on brown rice malt, a menu that goes hand in hand with junmai sake and wine. Because we only have a counter, our food is cooked right in front of our customers and served freshly grilled or deep-fried.
