Upon entering the restaurant, jazz music plays, and the Japanese decor along with a large painting of Mount Fuji in red is impressive. Once seated, the fried soba and fragrant soba tea are served immediately, bringing a sense of calm. The cold, locally sourced stone-ground soba is served in three portions, firm and rich in aroma. The dipping sauce combines the umami of bonito broth and a sweet soy sauce, enhancing the sweetness of the soba when dipped slightly. When I later poured in the smooth soba broth from the tokkuri (sake pitcher), it transformed into a mellow flavor that I couldn't help but drink up. The vegetable tempura, including eggplant, pumpkin, and maitake mushrooms, is crispy and pairs perfectly with coarse salt, leaving me completely satisfied until the end.
