The ancient grilling method is called the oldest and best cooking technique in human history, where food is slowly grilled using the far infrared rays of charcoal. Its flavor is unparalleled in the world, a unique taste. Excess fat and moisture that are not present in direct heat are appropriately removed, resulting in a very fluffy finish. The temperature of the charcoal is 870°C. It is grilled deliciously with exquisite heat control. Fresh fish is sourced directly from Hakodate Fishing Port, and seasonal fish from all over the country is procured from Tsukiji (Toyosu). A unique route has been developed to check the fishing conditions in Hakodate every morning around 5 AM. Hokkaido has the highest catch in Japan. We provide truly delicious fish. The fish sourced from Mr. Miyazaki in Tsukiji is selected from seasonal fish nationwide. He has 100 times the discerning eye of the owner, who has 15 years of experience! We also have unique routes to Sakai Port and Funakata Port, allowing us to handle fish that are rarely available in the market. Additionally, to address the recent issues of parasitic damage from fresh fish, we have introduced the i-spector made by Ishida Co., Ltd. in our store. The only place in Japan where Ebisu and Black Ebisu beer is born from Arita porcelain, this is the perfect Ebisu. Each glass is carefully hand-washed. Many izakayas only put their glasses in a dishwasher. However, truly delicious beer cannot be created that way. Dishwashers also wash plates and other items, which inevitably leads to oil sticking to the glasses. When beer is poured into these glasses, bubbles adhere, and the original creamy flavor is lost.
