At Laematsu Dining, you can enjoy lunches that incorporate fermented foods unique to the sake brewery. For example, the "Fermentation Connection Lunch (2,310 yen tax included)" features dishes made with enzyme brown rice fermented for three days, koji-based dressings, and fermented seasonings. For dessert, brown rice yogurt and other items on the menu allow you to fully enjoy the appeal of fermentation. The menu changes seasonally, so no matter how many times you visit, you will always find something new.

Located on the grounds of the Old Pine Sake Brewery, "Old Pine Dining" is a restaurant with a relaxed atmosphere in a renovated historical sake brewery building. The restaurant overlooks a Japanese garden, allowing diners to enjoy the seasonal scenery as they dine. You can spend a relaxing time in a space with the warmth of wood.

Founded in Meiwa 5, the Old Pine Sake Brewery has a long history as a purveyor of sake to the Yamazaki clan. Since its establishment, the company has been brewing sake using the Tamba Toji technique and the local nature, and boasts a history of over 250 years to date. In the sake brewery, while preserving traditional methods, new efforts are being made to take advantage of the power of fermentation. At "Laematsu Dining," we serve dishes that take advantage of the koji and fermented seasonings used in sake brewing to promote the appeal of fermented culture.
