I can enjoy various parts of the Hinai chicken prepared in different ways, and it excites me every time. The rare parts like bonjiri, neck, shoulder, and harami release their deliciousness with every bite, making it a joy to eat. Dishes like the refreshing skin and the combination of liver mousse and pain d'épices leave a lasting impression as appetizers. The dish that wraps egg yolk in Swiss chard and the steamed chicken breast are also carefully and pleasantly prepared. They pair well with natural wines and sake, making it fun to choose bottles and brands. There is a wide range of preparations, from grilled to terrine to braised, and I am delighted to encounter different dishes each time.
