The ayu fish was Shimanto ayu (a sweetfish from Shimanto), which can be served head first, and the ridiculously large 6 kilogram matsukawa flounder was served with roasted sake, a perfect match for the sake. Fuji salmon topped with pickled pineapple and tastes great with the acidity. The sake lineup is centered on local sake from breweries, and omakase is also available. The dishes are always a surprise and you can feel the changing of the seasons.
