Located in a mountainous area, the restaurant has a casual atmosphere where you can relax. The course meal flows smoothly from amuse-bouche to dessert, making it a pleasant experience. Local ingredients shine through, with the aroma of cacao nibs enhancing the corn and butternut squash soup, leaving a strong impression. The pasta allows you to fully appreciate the flavor of the fish, and the main dish, horse meat tagliata, was tender and paired well with the sauce. The chewy bread and creative touches like tiramisu topped with vegetables were also enjoyable. I was satisfied with the private room with a window, the view of the sea between the mountains, the attentive service, and even the finishing ginger tea.

Using seasonal ingredients to the fullest extent possible, this course meal is truly a hearty Hayama experience. The main dish is Hayama beef, a very rare and valuable brand of beef that is produced in small quantities. You can enjoy the high quality flavor that can only be nurtured in Hayama's rich environment. Based on the "make the most of the ingredients" attitude of Italian cuisine, we present an experience that is possible only in Hayama, where the producers of the ingredients and the restaurants where they are served are close to each other.
