The grilling technique that distinguishes between charcoal and firewood is fragrant, and I feel happiness with every bite. I can compare different parts of the meat, such as local chicken and quail, and fully enjoy the rich flavors of the meat. The lightly boiled chicken breast with refreshing plum sauce and the semi-raw chicken breast tartare were incredibly tender and impressive. The skewers combined with aromatic shiso and yuzu had a refreshing aftertaste, making me crave the next skewer immediately. The hot Satsuma-age and young corn and kale slowly grilled over firewood also made an appearance, with the vegetables being delicious enough to be the main attraction. The course reflected the craftsman's careful work and playful spirit, and I enjoyed it with excitement until the very end.
