A specialty of Ho Chi Minh! This Vietnamese version of okonomiyaki is fiercely competed for at specialized bánh xèo shops lining the streets of Ho Chi Minh. The sight of large frying pans set up in front of the shops, where they are being cooked, is overwhelming. A batter made from rice flour, turmeric, and coconut is poured thinly into the frying pan, topped with shrimp, pork, and bean sprouts, and then fried to a crispy perfection using a spatula. It's fascinating how you can eat as much as you want when you wrap it in fresh herbs and green vegetables and dip it in a sweet and sour sauce.

A Hanoi specialty! A dish made with fillets of white fish and shrimp stir-fried in a small pot with the notoriously pungent Vietnamese seasoning, mắm tôm, which is made from salted and fermented shrimp. The fish fillets are generously stir-fried with turmeric, green onions, dill, and other ingredients, making it a famous dish from Hanoi. When served over rice noodles and topped with mắm tôm sauce mixed with peanuts, it becomes addictive.
