Yoshio Aoyama, the 18th president of the restaurant, has inherited the traditional techniques of the restaurant, while listening to his customers and striving to improve his cuisine on a daily basis. He continues to serve dishes that delight his customers by devising every detail, from the smallest drop of soy sauce to the few seconds it takes to remove a dish from the heat.
