Made with locally sourced eggs, this chiffon cake is light on sweetness and oil. To achieve a fluffy texture, we increased the amount of egg yolks until just before the shape collapses. Enjoy with whipped cream and jam.
We made a slightly bitter ice cream using homemade roasted espresso and milk from Nasu Kogen. It has a slightly crispy texture as we did not add any additives.
We aimed to create coffee inspired by a long-established Western-style restaurant in Ginza. We mixed beans from Colombia, Tanzania, Mexico, and Ethiopia, roasted them slightly on our own, and carefully brewed them with a Nel drip. The taste features a citrusy aroma, a balanced bitterness, and a deep acidity for a rich flavor. We serve it in a thermos to keep it warm. The beans are sourced from Hokkaido's Hayakawa Coffee.
Kenyan beans have been dark roasted. By controlling the extraction temperature, it has resulted in a taste with less acidity, and a deep bitterness and rich flavor.
Rich espresso topped with frothy milk, poured with decorative patterns. The machine used is a vintage piece over 30 years old, which was featured in a Citroën car commercial before being used in our shop.
This espresso is extracted using a hand-pressed machine from the Italian company Pavoni. We use Kenyan beans that have been roasted deeply in-house, resulting in a well-balanced combination of bitterness and a hint of acidity.
This black tea is made from tea leaves grown without pesticides by small-scale farmers of the Meru tribe living in the highlands at the foothills of Mount Kenya in Africa. It has a well-balanced richness, flavor, and body. The tea leaves are sourced from the Japan-Kenya Friendship Association, which also provides educational support to the producers.
An original blend of herbs from Tateshina Herbal Note. This blend includes lemon balm, linden, apple peel, German chamomile, and pot marigold. It is caffeine-free, making it safe for pregnant women and those who are breastfeeding.

An organic drink made with organic cola, pink grapefruit soda, lemon soda, 100% plant-based ingredients, and spring water that has been flowing since Roman times, naturally carbonated with Siena's natural carbon dioxide. Imported from Italy, it is characterized by a gentle taste. The cola does not contain caffeine. The design of the bottle is also lovely. Please enjoy it in the original glass.
