Raw horse meat Yukke, attracting a flood of repeat customers.
It has high-quality fat on the top and bottom, with a chewy red meat in the center. This cut is unique to horses. It has a crunchy and distinctive texture, and is used for sashimi.
Meat located just below the mane on the nape of the neck. Koune is written as 'kōkon'. It is a part with 70% gelatin. The color is white, with a unique texture and sweetness, and it melts in the mouth. It is eaten as sashimi. Nowadays, it is a rare and difficult cut to obtain.
