The 100% buckwheat soba has a strong aroma and a firm texture, going down smoothly. In addition to clear and basic dipping sauces, there is also a fun option with a hazelnut flavor. Even without wasabi, you can enjoy variations in taste with salt or shichimi. Finally, pouring in the soba broth makes it mellow, and it pairs perfectly with the light, crispy tempura.

I had 100% buckwheat soba, which was rich in aroma, elastic, and went down smoothly. There is also 80% soba, allowing you to choose according to your preference. You can select from white, black, and hazelnut dipping sauces, making it fun to experience the differences in their characteristics. The white sauce has a clear flavor with a hint of bonito, while the black sauce has a mellow richness, both enhancing the soba. The nuttiness of the hazelnut pairs well with the white sauce, and the sweet potato tempura is also impressive. It goes well with shichimi (seven spice) and salt, and without wasabi, you can fully enjoy the flavor all the way to the last soba broth.
