This is our signature dish that is sure to become addictive. It features a homemade soy sauce made with fresh soy sauce sourced from the traditional soy sauce town of Shodoshima, perfectly matched with a seafood broth carefully extracted from dried sardines, dried mackerel, bonito, and kelp. Once you take a bite, you won't be able to stop! If you drink the soup down in one go, a smile will inevitably spread across your face.
Recommended for those who prefer a light taste! You can enjoy the umami extracted to the limit using our unique method. It has a gentle yet deep flavor. Of course, it is additive-free and without chemical seasonings. We only bring out the natural umami of the ingredients. The flavor and umami of sardines and skipjack tuna are highlighted by the synergistic effect with our specially made exquisite salt sauce. Our salt sauce uses 'Guérande salt,' a natural sea salt from the Brittany region, which has been highly regarded by renowned French chefs from the Bourbon dynasty to the present day. Be sure to give it a try!
The umami and richness of clams and small clams are perfectly matched with our homemade soy sauce blend, which incorporates multiple types of soy sauce from Shodoshima, boasting a 400-year tradition. This offers a different flavor profile compared to aged seafood soy sauce ramen, and it pairs exceptionally well with rice shochu and sake, creating an indescribable marriage of flavors. Be sure to give it a try!
Recommended for those who want to eat heartily! The spicy meat miso pairs perfectly with the chewy and smooth 'thick noodles', providing an excellent eating experience! ① Mix well and enjoy it as is first! ↓ ② Customize it to your liking by adding bonito flakes or shichimi (seven spice) that you have on hand! If you ask the staff, we can also provide you with lemon! It adds a refreshing touch and makes it even easier to eat. ↓ ③ Leave a little sauce and ingredients, and add a small portion of rice to finish! Enjoy every last bit.
The owner has carefully selected and blended dozens of spices from Nepal, Sri Lanka, and India to create a keema curry that is meticulously made and paired with our chewy thick noodles. It is a genuine dish that rivals specialty curry shops. The numbing spiciness is addictive. Supporting the stimulating flavors and aromas of the spices is our mainstay, the aged seafood broth. It is this umami foundation that brings out the complex aromas, richness, and depth of the spices. After eating the noodles, mix in the free extra rice and enjoy! You are sure to have a mysterious experience that will make you fall in love with curry at a ramen shop...?!
Based on aged seafood salt ramen, this has been arranged for a cold serving. With summer vegetables like okra and young corn, and delicious seared bonito perfect for summer, it pairs wonderfully with the cold salt ramen! Even on hot summer days, when you want to eat ramen, this can be enjoyed smoothly in multiple bowls!
This is a mixed noodle dish inspired by Yamagata's pull noodles, using healthy slimy ingredients such as okra, yam, and natto. While the original often uses canned mackerel, we use seared bonito to bring out a more seasonal flavor. It's a nutritious and super healthy bowl. Let's eat the slimy mixed noodles to boost our energy before the heat gets to us!
◎Choose from noodles: Spicy Meat Miso Mixed Noodles, Aged Seafood Salt Ramen, Aged Seafood Soy Sauce Ramen ◎Choose from rice dishes: Fried Rice, Meat Miso Rice with Raw Egg, Bonito Tataki Rice Bowl, Rare Chashu Pork Rice Bowl
The contents are the same as the regular full meal set.
The pork loin is carefully cooked slowly at a low temperature. It is prepared to retain the meat's flavor and juices, ensuring it remains moist and tender, resulting in a soft and fluffy chashu. It pairs perfectly with beer.
The photo shows it served as an appetizer. The pork belly, simmered thoroughly until it becomes tender, is exceptional. It is not the common greasy and vulgar chashu. We aim for a refined flavor based on the umami of the broth, allowing you to enjoy the fat deliciously. In fact, the fat of the pork belly is what makes it so tasty. I believe this chashu will help you fully appreciate that. Of course, it pairs perfectly with alcohol as well.
You can add this as a topping for cold noodles. Of course, it's also great as a snack, so feel free to enjoy it with your drinks!
The seafood broth and special soy sauce soak into the runny yolk, creating an irresistible deliciousness.
It's not just a pile of bean sprouts like the so-called Jiro-style. We also use plenty of other vegetables such as cabbage, radish, green onions, and seasonal vegetables.
・3 types of snacks chosen by the owner + 1 drink of your choice. Examples of snacks include: rare ham made from chicken breast, tender braised pork belly, a platter of smoked items (such as pork throat, smoked egg, Spanish mackerel, and sweet potato fritters), healthy chicken spring rolls, …etc. *Normally priced at 1,425 yen (tax included), but the opening price is 1,000 yen (tax included).
Fried chicken wings coated in a crispy batter, drizzled with a sweet and sour sauce. When you bite into them, juicy flavors and meat juices burst out. They pair well with beer, highballs, lemon sours, shochu, and more!
Please enjoy the tender, simmered spare ribs sizzling on a hot plate with a sweet and spicy sauce. There's no way it won't pair well with beer.
Beef offal is simmered slowly in a sweet and spicy sauce. You can sprinkle some chili powder for a spicy kick, which is also delicious. It can be enjoyed as is, but it is recommended to dip it in egg yolk before eating.
This is a homemade tsukune made by mixing chicken mince with several types of spices. The moment you bite into it, juices from the meat burst out.
A popular regional dish in Germany. It is a sausage served with curry sauce. The combination of curry and melted cheese enhances the deliciousness of the sausage.
Grilled firm tofu served with homemade meat miso. It may have a similar sensation to eating mapo tofu in chunks. It pairs wonderfully with beer, as well as barley shochu.
Thin fried tofu is filled with meat miso and cheese, rolled up, and baked. The origin of the name is something that those who know will understand...
Stuffed with homemade curry sauce and baked. Crispy on the outside! The gooey texture from the inside is irresistible.
The third installment of the thin fried series. This one has pork loin and cheese sandwiched inside. The pork loin itself is well-seasoned, so it is delicious enough to enjoy as is, without any additional condiments.
As we have introduced in the topping menu, it is also served as a snack, and I would really like you to try it, so I am including it again. It is, of course, a great snack, and you can eat several bowls of white rice just with this.
This is the fastest served appetizer. It also serves as a topping and an appetizer, so I am introducing it again. If it's in front of you, you might find yourself endlessly munching on it; it's the ace of the appetizer world. It's important, so I'll say it again: this is the item that can be served the fastest from our appetizer menu. If you want to drink while snacking quickly, please be sure to order this.
You often see it at yakiniku restaurants. Pork jowl. When grilled, the fat drips down and it looks like a fire hazard, right? And when you eat it, it's crunchy. If you grill it too much and let too much fat drip off, it becomes tough and not tasty. However, when it’s smoked, it becomes incredibly tender! Moreover, the fat in the pork jowl absorbs the aromatic components of the smoke very well, so the aroma is fantastic! It’s not cooked over an intense fire that causes the fat to drip off; instead, it’s cooked gently and slowly, so it retains moisture and the fat remains. That’s why it’s tender. You’ll understand once you try it. You’ll get hooked.
This is the second fastest menu item we can serve at our restaurant. And it's incredibly cheap. If you're unsure, it's also a good idea to give it a try.
It has a moist texture and rich flavor reminiscent of cheese. The moderate saltiness and miso aroma make it a perfect accompaniment to drinks.
This is a unique premium barley shochu that impresses many shochu enthusiasts. It is a fragrant original spirit 'Nakanaka' that has been long-aged in oak barrels, with a robust barley aroma. Blended from 4, 5, and 6-year-old spirits, it retains the rich barley flavor while the exquisite aging aroma from the oak barrels adds an irresistible deliciousness. It feels like happiness flows down your throat. There are not many places where you can enjoy A Century of Solitude at such a price. It is uncertain when it will be restocked next. Limited quantity available. Please take this opportunity to try it.
Generally, this is a rare barley shochu made with black koji, which is typically used for sweet potato shochu. While most barley shochus are refreshing, this Black Scorpion hits you with a 'bang.' It has a solid full-bodied profile.
This is well-known as the pinnacle of barley chocolate-style shochu. It has become rare to find it traded at its regular price, making it one of the premium shochus. The incredible roasted barley aroma that spreads the moment it touches your mouth is irresistible. There are hardly any places in Osaka where you can drink Kanpachi at this price. Be sure to give it a try!
You can feel the robust flavor and toastiness of barley, characteristic of atmospheric distillation, but the mouthfeel is light and refreshing, so even those who thought, 'I'm not that fond of barley shochu,' might come to like it because of this product. It's such a item.
This is a representative example of a clean and easy-to-drink barley shochu. It has no peculiarities, so it can be paired with any side dish.
This is a barley shochu that has undergone long-term aging in oak barrels. Among inexpensive aged shochus, it stands out for its rich flavor, with a strong aroma of the barrel. I believe it may be easy to drink even for those who are not fond of shochu. The aroma derived from the barrel gives off a sweet scent reminiscent of vanilla.
The harmony created by the unique base spirits aged in four types of barrels (sherry cask, hogshead type cask, and two types of punchon type casks) offers an indescribably rich aroma. Although it is shochu, it has a flavor reminiscent of Western spirits. It is best enjoyed on the rocks, but due to its slightly higher alcohol content and strong aroma, it can also be enjoyed as a water dilution or highball.
It is a refreshing type of wheat shochu, but you can also distinctly feel the roasted aroma of wheat. It is very easy to drink, so be careful not to overindulge. It pairs well with meals as well.
(*This will be served in a half bottle) A very popular product from Satsuma Shuzo, the representative of long-term aged barley shochu, 'God's River' is now available as a sparkling version! Retaining the mellow aroma and sweetness reminiscent of vanilla from oak barrel aging, it has become even more refreshing and easy to drink with the sparkling addition. I believe even those who are not fond of shochu will have no problem drinking this. If you close your eyes while drinking, you wouldn't even know it's shochu. Haha.
This is a premium sweet potato shochu that boasts popularity rivaling the 'Three M's' (Moriizo, Maou, and Murao). It beautifully shatters the preconceived notion that 'sweet potato shochu is not suitable for aging.' This is a gem of aged sweet potato shochu proudly produced by Nishishuzo. The sweetness of the sweet potato and the elegant aroma from barrel aging match perfectly, providing a sense of happiness as if being invited to paradise. There are likely no other places where you can enjoy this at such a price. Please give it a try.
This baked sweet potato shochu is so rich in the sweetness and flavor of sweet potatoes that it makes you feel like you are drinking a 'liquid sweet potato.' Despite this, it does not have the typical 'potato-like' taste, making it very easy to drink. It is a product that I would especially recommend to those who have a negative perception of sweet potato shochu.
A sweet potato shochu that is truly one of a kind, unlike any other. This sweet potato shochu is made using corn koji and aged for 10 years. It is then further aged for an additional year in bourbon barrels. It is a miracle to be able to drink such a meticulously crafted spirit at this price. We are grateful for the dedication of the brewery. Due to its deep aging, it has a mellow umami and the aroma of the barrel. There is also a hint of corn-like flavor, but the finish is unmistakably sweet potato. The taste unfolds like a drama in your mouth. If you love shochu, you must try this at least once. No, even if you don't love shochu, you should definitely give it a try!
This is an incredibly fruity sweet potato shochu. Unusually for shochu, it uses wine yeast, which results in a mysterious flavor with sweet aromas reminiscent of melon and banana. Although it is a sweet potato shochu, its rich flavor makes it feel somewhat like a fruit liquor.
A sweet potato shochu with a refreshing citrus aroma. It is delicious on the rocks, but when mixed with soda, the fragrance becomes even more vibrant and delightful. This citrus-flavored sweet potato shochu mixed with soda is currently very popular among women.
This is a high-quality sweet potato shochu that is even used on international flights. It is made using freshly dug sweet potatoes, preserving the fresh flavor of the potatoes. It has a light and easy-to-drink texture, yet the aroma and umami are robust. It is a limited production made entirely by hand, which adds to its premium status. There are not many places where you can enjoy this at such a price, so be sure to give it a try.
A delicate and complex flavor that harmonizes the sweet and fragrant taste of sweet potatoes with the sweet and mellow aroma of vanilla from oak barrel aging. While this is often seen with barley, sweet potato shochu aged in oak barrels is very rare, yet it truly harmonizes well. It pairs well with almost anything, but to fully enjoy this complex flavor, it is highly recommended to drink it on the rocks as an aperitif.
This shochu is made using purple sweet potatoes, offering a more refined taste and a prominent sweet aroma compared to regular sweet potato shochu. It is also barrel-aged, giving it an amber color. The flavor is different from that of Amber's Drowsiness due to the different type of sweet potato used, resulting in a unique taste.
This is the foundation of 'Kumamoto Shochu,' a brand that is now proudly recognized worldwide, created from the clear waters of the Kumagawa River and high-quality rice. The commitment goes beyond just the ingredients. Long-term aging in sherry casks and cognac casks beautifully shapes Oishi's elegant aroma and deep flavor. It has an extremely refined taste. There are likely many fans among those who love rice shochu. Be sure to try it at least once.
This is a long-term aged rice shochu. It features a fruity ginjo aroma reminiscent of premium sake, combined with sweet vanilla-like and toasted aromas derived from oak barrel aging, resulting in exceptional deliciousness. The alcohol content is 25%, which is higher than sake due to it being shochu, but it is surprisingly easy to drink. It pairs well with salads, pickled snacks, or fish dishes, but it is recommended to enjoy it on its own, either as an aperitif or digestif, served on the rocks.
This is a very refreshing and easy-to-drink rice shochu. The initial taste has a crispness similar to that of a refined junmai sake, but once you taste it, a gorgeous aroma spreads in your mouth, reminiscent of a daiginjo. The aftertaste is also refreshing, making it a shochu that you might end up drinking too much of.
This is a brown sugar shochu from Amami Oshima that has been aged for over three years. It preserves the unique aroma and flavor quality of brown sugar, and the 'Umisaki' made with white koji and distilled under atmospheric pressure brings out its deliciousness. It is said to have been praised by the world's best sommeliers. It has a soft mouthfeel and a vibrant aroma that spreads. The taste is also very profound. Once you try it, you may understand why it has been praised by the world's best sommeliers.
This is an exceptionally long-selling old liquor in the history of awamori. Due to long-term aging in oak barrels, it has a mellow and deep flavor with an irresistible vanilla-like aroma. It has received the highest gold award at the Monde Selection international quality competition, which is a testament to its quality. Among awamori, it is very easy to drink and has a rich taste, so I highly recommend it to those who have never tried awamori before. You will surely discover the charm of awamori, especially old liquor.
The moment it touches your mouth, the aroma of sesame rushes through your palate. I believe this pairs exceptionally well with dishes that use sesame oil and soy sauce. Since many of our snack menu items use soy sauce, it is perfect for enjoying with food!
The unique floral aroma of ale spreads, along with the toasty scent of malt. It has a different deliciousness compared to the crispness of lager.
