At the shop in front of the hot spring facility, my excitement rises the moment I see the soba piled high in a lacquerware bowl. The noodles, made with 100% buckwheat, have a firm texture, and the addition of a bit of natural yam gives them a wonderfully smooth finish. When I take a bite of the soba along with the spicy grated daikon, the harmony of sweetness and spiciness spreads, making me smile involuntarily. Although the portion of soba looks larger than it actually is, I find myself finishing it in no time, which is a delightful surprise. The menu also features unique options like jidori soba and botan soba, making it fun to decide which one to choose. The warm hospitality of the owner and the comforting taste of the service add to the relaxed and happy atmosphere that permeates the entire shop.
