With each bite, the concentrated umami and firm texture spread, and the aroma of the charcoal is irresistible. The sweet kashiwa rice balls and rich soup pair perfectly, leaving you satisfied until the end. I entered a specialty restaurant for free-range chicken, loved for its charcoal aroma since ancient times. The first dish that came out, chicken sashimi, was glossy with a crunchy texture, and I could feel the freshness with just one bite. The grilled thigh that followed was crispy on the outside and juicy on the inside, with the excellent combination of the charcoal's savory aroma and a simple seasoning of salt and pepper. Despite being cooked rare, it was warm all the way through, and with each bite, the umami and aroma of the free-range chicken spread. The fragrant yuzu pepper, sweet rice balls, and gentle soup were all perfect, creating a happy flow until the end. When paired with pre-mixed sweet potato shochu, it became even smoother, and I felt cozy enough to enjoy it leisurely, even alone.
