With a 40-year career spanning from Tokyo to Hokkaido to NY, our nigiri sushi showcases the long-standing skills of artisans. We offer it starting from 209 yen (tax included) so you can enjoy it in a more accessible way. Please use it as a 'sushi bar' where you can casually enjoy sushi with a glass of sake, just like enjoying wine and tapas at an Italian bar.
Using Nanashiro rice (Kikuchi rice), which has been loved by gourmets since the Edo period and has received the 'Special A Rice' certification for nine consecutive years as of 2018. It features a chewy texture and a sweetness that expands with each bite, making it an excellent match for sushi. By using aged rice with low moisture content, it offers a pleasant texture that quickly dissolves in the mouth.
A variety of ingredients categorized into white fish, red fish, freshwater fish, shellfish, and more. To maximize the inherent flavors and tastes of each ingredient, we also change the seasoning according to the type of ingredient, which is an essential part of the 'Edo-style preparation.' This includes using boiled soy sauce, sweet sauce, ponzu, salt, plum soy sauce, ginger soy sauce, and marinated sauces. Additionally, for the marinated salmon roe, we add yuzu peel for a refreshing touch. Please pay attention to the various seasonings that highlight the individuality of each ingredient.
In addition to the various techniques and innovations that artisans apply to sushi, we are also known for the deliciousness and freshness of the fish itself. We source fresh seafood selected by fishermen from various fishing ports in Hokkaido, a well-known treasure trove of marine products, as well as from the natural fishing grounds surrounded by the three seas: the East China Sea, Ariake Sea, and Yatsushiro Sea, such as 'Amakusa Ushibuka' in Kumamoto Prefecture and 'Sakaiminato' in Tottori Prefecture, one of the largest fishing ports in western Japan. Please enjoy the deep umami and the aroma of the sea to the fullest.
