It requires an astonishing amount of time and effort due to traditional cattle raising methods. However, the mozzarella cheese made with such care is exceptional. The processing method is unique to Ushibuka, where the sea is clean, and it is made with great care, so we respectfully call it 'Amakusa Ushibuka Dashi'.
