This is the pinnacle of yam, made by grating round yams, which are a specialty of Kaga, and mixing them with rice flour and fine sugar. It is wrapped around a unique sweet bean paste from Matsubaya that includes white adzuki beans and then steamed.
This is a cute monaka made into bite-sized pieces, inspired by the New Year sweets 'Fukumai' associated with Kaga Hyakumangoku, available only during the New Year and year-end. Enjoy the two flavors of yuzu bean paste and red bean paste.
