Aged meat has been aged for about 40 days using the dry aging method. It has a rich aroma and the more you chew, the more umami it releases. Fresh chicken from Aichi Prefecture is moderately aged and served. The chicken, reaching its peak umami, is grilled over super high heat using Binchotan charcoal. For game meat, we source the best cuts from the most delicious regions at the time: tenderloin from deer and loin from boar. The rock salt is natural rock salt from Sicily, Italy, with a punchy saltiness that pairs perfectly with skewers. The soy sauce is from Mie Prefecture, Fukuoka Soy Sauce Shop, 'Hasazume Soy Sauce,' which is so mild and delicious that it can accompany rice but cannot be picked up with chopsticks.
