Yawaraka Hōzenji-ten

The highlight is the soup and carefully selected wagyu offal! The soup is slowly simmered for a long time to avoid cloudiness, using chicken bones, and is lightly seasoned with a soy sauce called 'Kanro', which has sweetness and richness sourced from Kyushu, along with light soy sauce. At first bite, it may seem a bit light, but by taking the time to extract the flavors properly, even if it reduces slightly, it won't become too salty, resulting in a rich and robust taste. Once you try it, you'll definitely nod in agreement with its flavor.

The name comes from the unique square iron plate that resembles a 'chiritori'. Each ingredient is surprisingly infused with meat juices and sauce, enhancing the flavor. It has an unparalleled charm. It's also great to add udon at the end, or to stir-fry rice and eggs for a fried rice style, which becomes fragrant and very delicious.
