From the very first turtle jelly, I felt the careful preparation and it made me excited. The grilled sardines and semi-dried tomatoes placed on fried buckwheat flour can be eaten crisp by hand, and the richness of the fat combined with the refreshing acidity is superb. The onion puree, made only with salt, is surprisingly sweet, and the tempura of the butterbur sprouts on top provided a nice accent. The dish of freshly cooked Koshihikari rice in a clay pot topped with new salmon roe has a soft texture, and the delicate roe is brightened by the sudachi citrus, creating a very happy flavor. The fishing horse mackerel dumpling soup and the kombu-marinated sweet shrimp also highlight the natural flavors of the ingredients, with a gentle saltiness and a refreshing aftertaste. I was able to enjoy everything, including the hand-made soba noodles at the end, and I was enveloped in satisfaction until the very last bite.
