Black koji is said to be the origin of shochu koji used in awamori, which is considered the root of shochu. This authentic shochu is brewed using the unique fermentation technique of this brewery called 'sandankomi,' recreating the 'black koji' from historical records. It has a rich and robust flavor with a lingering subtle bitterness and a smooth sweetness.
