The representative of fresh cheese, mozzarella, has a beautiful texture that becomes more delightful the more you chew. Just a few hours ago, it was freshly squeezed! Fresh milk from dairy cows is fermented and solidified into curds, then hot water is added, and it is kneaded and torn together. By skillfully executing this process, it becomes a glossy, pure white gem with a chewy, stretchy, and firm texture. Shaped according to the tradition of the Puglia region, it is tied into bite-sized pieces. When you take a bite, you experience a fibrous, beautifully pleasant texture with an overwhelming milk flavor that has no off-taste! This is the ultimate proof of freshness.
