The key to its deliciousness is sourcing exceptionally fresh senmai. There is no other way. The safety point is to 'heat sterilize at a core temperature of 75 degrees Celsius for at least one minute.' Heating sterilization will somewhat diminish the unique crunchiness of senmai. Therefore, it is essential to have the freshly slaughtered, crunchy senmai on the same day.

In typical motsunabe specialty restaurants, the common method is to add raw offal into cold broth and cook it, known as the 'pre-addition method.' However, this causes the unique flavor of the offal to transfer into the broth. Our motsunabe adheres to the basics of cooking by adding the offal after the broth has come to a boil, known as the 'post-addition method.' The resulting broth is clear and free of off-flavors, allowing you to enjoy the rich flavor of the offal to the fullest. We also offer a single serving of 'Motsunabe Single' for 2800 yen.
