A Beloved Local Gem for Hand-Made Soba

Hachuuan is a soba restaurant renowned for its stone-ground, hand-made soba, cherished by locals for many years. The soba, with its white hue and translucent quality, is refreshing and features a unique, springy texture. The broth, which is not overly sweet, harmonizes beautifully with the aroma of the soba served on the plate, creating an exquisite balance.

The hand-made, pure white soba is smooth and has an excellent texture. The soba dipping sauce initially feels gentle in flavor, but as you continue eating, the umami spreads thoroughly. The freshly fried tempura has a slightly moist batter, and both the vegetables and shrimp are cooked just right, releasing a wonderful aroma. The soba tofu and pickles that came with the set served as a nice palate cleanser, allowing me to enjoy the meal without getting bored until the end. When I diluted the dipping sauce with the soba water served after the meal, the aroma of the broth wafted up, providing a comforting feeling. The service was also attentive, and the calm atmosphere of the restaurant allowed me to leisurely enjoy my lunch.
