(Course duration is approximately 3 to 3 and a half hours.) ・We do not accommodate foods that are sensitive to ingredients, vegetarians, vegans, or allergies. In a calm space renovated from a storehouse, it's exciting to watch the cooking process over the counter. The course features dishes packed with local seasonal ingredients, and before I knew it, I was engrossed in tasting over twenty plates. The latter part, where vegetables take center stage, was particularly interesting, with the aroma of firewood and charcoal enhancing the flavors. I was surprised by the richness and depth of flavor from the homemade fermented seasonings and kombucha vinegar. The non-alcoholic pairings had enough character to make me nod in agreement with their compatibility with the dishes. The grounds were spacious, so I got a bit lost, but that made me happy as it felt like a mini trip from the moment I arrived.
