The kiritanpo hot pot, flavored with Hinai chicken broth, was very delicious. The nicely grilled kiritanpo absorbs the soup just right, conveying a rich umami flavor. The combination of maitake mushrooms, roots of seri, burdock, and green onions spreads a wonderful aroma. True to the region, it also includes shirataki noodles, adding a delightful texture contrast. The kiritanpo is added quickly at the end, so it retains a chewy texture without falling apart. The staff prepared everything with care, and I was able to enjoy dishes like miso kiritanpo in a beautiful and calm restaurant setting.
