The food is made with local ingredients, and the funa-zushi (funa-zushi is a type of fermented crucian carp sushi) is especially delicious. It is a pleasure to spend a blissful time at Kouri-an.

Located in Kaizu, Uoji's restaurant is tastefully decorated with the stone masonry remaining on the lakeshore. Founded in 1748, the restaurant has a long history and is well known for its excellent sake pairings. The "funa zushi tomowae," a preserved food made by chopping funa zushi into small pieces and mixing it with rice, is especially recommended. I felt that the sake brewing techniques of the time when Kourian was around might be revived. We visited and supported Uoji-san.
