We keep them alive in the aquarium inside the store. Prices vary depending on size, ranging from 3000 yen to 4800 yen.
From June to August, it is caught in Hiroshima Bay, but in other months, it comes from neighboring Iwakuni or Kure, or from Ehime Prefecture. There may be days when it is not available due to weather, fish shortages, or market closures.
We keep them alive in the tank inside the restaurant. There may be days when we cannot receive shipments due to fishing bans or weather conditions.

Kure City, Hiroshima Prefecture. We aim to create a crisp and dry sake using the brewing water 'soft water brewing method' that springs from the grounds of Hōken Sake Brewery.
Located in Kanbe Town, Fukuyama City, Hiroshima Prefecture. Using 'Tenpo Ichi underground water' which is moderately hard water, it is aged with bamboo charcoal for more than two days, resulting in water rich in minerals. It features a rich flavor even within its dry taste.
Kurose Town, Higashi-Hiroshima City. This sake is a confident creation named after the fifth generation of Kanemitsu Brewery, Mr. Kanemitsu Hideki, and the former municipality name 'Kamo District', aiming to be the fourteenth generation of the post.
Mihara City, Hiroshima Prefecture. The representative brand of the Yamane main store. The sake that Daikan Yokoyama loved to drink throughout his life. It uses soft water from Mount Takanosu in Fukutomi Town as brewing water.
The original store located in the basement of a condominium in Naka Ward, Hiroshima City. The owner, who is also the master brewer, handles everything alone, and due to its underground location, the sake is brewed throughout the four seasons, reflecting a significant commitment to quality.
Kamei Sake Brewery located in Saijo, Higashi-Hiroshima City. They continue to produce crisp and dry sake. 'Yama' is a private brand series from the sake merchant Yamada.
Imada Sake Brewery located in Aki-Tsu Town, Higashi-Hiroshima City. The toji (master brewer) is the daughter, who is well-known worldwide. Among the brewery workers, there are even foreigners who come to train, making it a global brand. This sake lives up to the reputation of Aki-Tsu, the home of ginjo sake.
Umeda Sake Brewery located in Aki Ward, Hiroshima City. It uses spring water from the Iwataki Mountain behind the brewery as brewing water. This sake is made with sake rice produced in Hiroshima, crafted by Hiroshima brewers.
Enoki Sake Brewery located in Ondo, Kurahashi Island, Kure City, Hiroshima Prefecture. It is famous for being the first in the country to produce Kijo sake. This luxurious sake is brewed using pure rice sake as the brewing water, and you can enjoy it from the nouveau to aged sake up to 10 years.
Saijo Tsuru Sake Brewery located in Saijo, Higashi-Hiroshima City. The brewery, built in the mid-Meiji period, resembles a museum. Even now, wooden barrels and wooden steamers are still in active use. The well water from the Tenpo well inside the brewery, along with locally contracted sake rice and traditional handmade methods, are still a point of pride.
Asahiho Sake Brewery located in Kabe, Asakita, Hiroshima City. The water in Kabe is close to hard water among soft waters, characterized by its softness and pleasant mouthfeel. Currently, the young seventh-generation son is serving as the toji (master brewer).
Yamaoka Shuzo, located in the third city of Kananu, cultivates its own sake rice and performs its own milling, ensuring consistent quality management. It is characterized by a rich, dry flavor with a sharp finish.
Chugoku Shuzo is located in Hatsukaichi Sakurao. The pear-like sweetness spreads in the mouth, followed by a soft umami flavor, and a refreshing acidity rounds out the finish.
Kamoizumi Sake Brewery located in Saijo, Higashi-Hiroshima City. As a top-tier sake brewery in the sake town of Saijo, it is engaged in the cultivation of sake rice in collaboration with local farmers, forestry management to protect the brewing water of Saijo, and local government.
Yamagata Prefecture. This sake is quite difficult to obtain. Limited to one cup per person.
Hiroki Sake Brewery located in Aizu, Fukushima Prefecture. Originally, they produced a sake called Izumikawa, but in 1999, the brewery owner and toji (master brewer) Mr. Hiroki's unfiltered, undiluted sake became a huge hit. It is now a difficult-to-obtain sake.
Kiya Masashu Brewery located in Nabari City, Mie Prefecture. The brewery, which has been in operation since the Edo period, launched the 'Jikon' brand in 2005 under the sixth-generation toji and owner, Mr. Onishi. It is now a rather hard-to-obtain sake.
Yaoshin Sake Brewery located in Iwakuni City, Yamaguchi Prefecture. It was a merchant for the Iwakuni domain. The rice warehouse is located near the mouth of the Nishiki River, and that is where the history begins. The fifth generation Kobayashi, serving as both the owner and the toji (master brewer), named a limited edition unfiltered sake 'Gangi' and released it in the year 2000, which became a huge hit.
