The 'Tenon Tsuchigumo' from Itakura Sake Brewery in Izumo, Shimane, is a sake that has been naturally fermented with the coexistence of wild yeast and lactic acid bacteria. It is made using the Kimoto method and is unfiltered with a single pasteurization, using improved Omachi rice with a polishing ratio of 60%. A phenomenon that is usually unlikely occurred, where yeast fermentation and lactic acid fermentation progressed simultaneously, resulting in an acidity of 6.0 and a sake meter value of -2, creating a high acidity yet mellow flavor. This was not intended by the maker, and similar to the previous work 'Sakeru', it is a phenomenon close to coincidence. However, due to the action of the yeast, a clear acidity dominated by lactic acid is expressed rather than a bacterial acidity, resulting in a unique character with deep umami and softness. The name 'Tsuchigumo' was given as a counterpart to 'Tengumo', which means 'a sake that drifts in the heavens', symbolizing strength and depth as it dives into the earth and unearths the primitive. Compared to 'Sakeru', which had a sharp acidity, Tsuchigumo has a subdued acidity, enhancing the gentle and flavorful characteristics typical of Tengumo, evoking a sense of brotherhood or a relationship of opposites. The maker himself views this sake not as a 'fortunate mistake' but as a 'possibility suggesting future natural brewing', making it a significant presence that will provide great hints for future sake production.
