Originally made with lamb or mutton kidneys and meat, it is now prepared with various meats including beef, pork, lamb, chicken, and even fish like sturgeon, depending on the region, religion, or tradition. The common feature is marinating the meat in a mixture of vinegar, wine, olive oil, garlic, onions, black pepper, cloves, herbs, and salt for a long time before grilling it on skewers. Our Shashlyk uses 200g of pork marinated in an original sauce and carefully grilled on iron skewers.

Furthermore, it is not uncommon to find variations that can be described as fried Chinese buns in terms of ingredient composition and seasoning. Piroshki in Russia is a food similar to 'onigiri' in Japan. Although various fillings are used in the homeland, our piroshki is a baked piroshki made from a dough of wheat flour, eggs, milk, ground meat, boiled eggs, onions, and rice as a binder, without using any water in the dough.
