Silver Mutsu, also known as Mero, is one of the fish species that Japan struggles to procure in the global market. It was difficult to source the original body of Silver Mutsu (Mero) in Japan, as it is mostly available in the form of collar. However, a shop owner succeeded in procuring it through a special route and made it a staple by marinating it in Nishikyo miso for a week. The shop owner believes that there are very few places that can serve this class of grilled fish honestly.

This is a Taiwanese-style sausage known as Taiwanese red sausage in the world. After ordering, it is boiled and then grilled to give it a charred appearance. It has a strong aroma, similar to what you might get if you grilled a dry sausage raw. It's a seriously thick sausage, with two big ones served together.
