The zaru soba has slightly thicker, flat noodles that are firm and easy to eat. The dipping sauce has a rich flavor and a pleasant acidity that pairs well. The cold udon has sturdy noodles and can be enjoyed with a warm, hearty dipping sauce. There is also a wide type called 'yamagasoba,' which is fun and reminiscent of houtou.
